The predecessor of Pungukmyeon, known as the oldest noodle specialty company in Korea, was "Hwangil Jemyeon," founded in 1933 in Daesin-dong, Daegu, named after the pen name of its founder, Mr. Shin Jae-soon. True to its nature as a noodle specialist, Pungukmyeon has established itself as a noodle restaurant offering a diverse range of noodle dishes, currently operating 20 branches in Daegu alone. Having opened its doors in Daegu during a time when noodles were scarce, and named "Pungukmyeon" with the intention of enriching the world through noodles, the company has steadfastly maintained its position as a daily staple for ordinary people amidst the harsh turmoil of history, including the Japanese colonial period and the Korean War. Pungukmyeon was the first in the country to introduce mechanized noodle-making methods and was the first to use the name "Kalguksu" for its flat noodles. They use broth simmered gently for five hours and serve the noodles at a temperature maintained at 40°C, the optimal temperature for optimal taste and eating. As a brand specializing in noodle making, Punguk Myeon's noodles contain absolutely no artificial colors or additives; instead, they utilize vacuum dough aging to create a soft yet chewy texture. The noodle menu is diverse, featuring dishes such as seafood kalguksu, yeolmu bibim guksu, Gangneung jjamppong kalguksu, and black soybean noodles. In addition, the menu includes meal options like crab doenjang bibimbap, cockle and seaweed bibimbap, and clam and seaweed soup. Regardless of the menu item, it serves as a hearty and warm meal accompanied by the pungent umami flavor of Punguk Kimchi, which is freshly mixed every morning.
