CEO Jeong Man-gi, who had been in the machine tool business, had long dreamed of running a restaurant. While conceptualizing his business with plans to open an izakaya, he unexpectedly fell in love with the charm of craft beer. With the help of Gerard Hatch, a craft beer expert residing in Daegu at the time, he opened Daedo Brewery. The name Daedo Brewery is a combination of "Daedo" (meaning "large island," using the characters for "large" and "island") and "Yangjojang" (meaning a factory producing makgeolli or soy sauce). The establishment acquired the land and name of the original "Daedo Brewery," which produced makgeolli in the 1950s. Unlike modern beer establishments that use sophisticated labels like "brewery" or "pub," it exudes a warm and comfortable atmosphere and has quickly established itself as a representative beer spot in Daegu. Located behind the shop is the brewery where the entire beer-making process takes place. From the initial task of crushing the malt to creating recipes tailored to the beer's characteristics and the final stage of fermentation, everything is carried out right here. As a small-scale brewery that does not engage in external distribution, Daedo Brewery focuses solely on the taste of its beer while maintaining its own unique quality. Among them, the beers bearing the brewery's brand name—Daedo Helles, Daedo Pilsner, Daedo Golden Ale, and Daedo IPA—are always in production, allowing customers to enjoy them at any time without any pressure. Of the total 14 types of beer, excluding these four varieties, the remaining 10 are newly introduced according to the season and customer needs. This is intended to help even those new to craft beer start with the most basic options and gradually develop an interest in the special line. Additionally, the beef flank steak chop steak—made with fresh flank meat delivered daily, hand-trimmed, marinated, mixed with fresh vegetables and bell peppers, and stir-fried in teriyaki sauce—and the dried pollack—hand-shredded, generously brushed with butter, and baked crispy in the oven—may be standard menu items, but they are perfect for pairing with beer. At Daedo Brewery, which started with the fresh idea of brewing beer in a place typically referred to as a factory for producing makgeolli or soy sauce, a glass of even more delicious and refreshing beer awaits, filled with the brewer's heartfelt dedication.
