Opened in 1951, Sinbalwon serves as both the first and last stop on any Busan tour. This is because many visitors flock here immediately upon arriving in the city, while others rush to grab dumplings to take away before leaving. As takeout orders increased, Sinbalwon installed kiosks, allowing customers to pick up delicious meat dumplings filled with juicy broth and a distinctive aroma without long waits. Located at the entrance of Chinatown, Sinbalwon was selected as a "Centennial Store" in 2021, having widely introduced a new world of Chinese-style dumplings across three generations. Having passed the business from parents-in-law to daughter-in-law, and then to daughter and son, the company has now launched online sales, spreading Sinbalwon's taste and spirit beyond Busan to the entire nation. Meanwhile, the interior of the store catches the eye with a dense display of autographs from famous figures, including a note from Director Park Chan-wook, a regular customer. To leave visitors with such unforgettable memories with just a single dish of dumplingsโwhat, then, is the secret? CEO Su Ui-deok explains that the key to their success lies in the uncompromising selection of fresh ingredients and the strictness of checking the taste of every single menu item without fail. Furthermore, they adhere to the principle of "daily production, daily sales"โselling only food made that dayโand the method of hand-making and cooking dumplings immediately upon ordering. In this way, Sinbalwon clearly captures the moment when food tastes its best, grounded in trust in its flavor. Additionally, the precise and swift hand movements of the chef, who clearly demonstrates decades of experience, are fascinating to watch. The kindness and gratitude evident on their faces while diligently making dumplings further enhance the charm of the space. Beyond the signature meat dumplings, the pan-fried dumplings with their excellent thick and crispy wrappers, and the warm, savory Taiwanese-style soy milk served with chewy crackers, are pairing menus not to be missed. The crunchy and tangy cucumber salad complements the dumplings, refreshing the palate. If you are craving sweet and savory Chinese snacks, do not forget Sinbalwon's hidden gems: mooncakes and twisted donuts. Eating it with a drink on a moving train truly makes both your mouth and your heart happy.
