CEO Aurora, who runs Laura's Mill, could never forget the savory aromas and warm greetings she encountered at the mill she frequented with her aunt, who looked after her while her parents were busy during her childhood. She is now capturing those cherished memories in the bread, coffee, and charcuterie of the current Laura's Mill. Starting as a small roastery café in Daejeon in 2019, Laura's Mill has grown into a space where everything from coffee roasting and natural sourdough hard bread to homemade meat products is completed in one place. The signature Jambon Beurre boasts a deep flavor and aroma, featuring jambon made from cured and sous-vide Korean pork hind leg sandwiched between bagels along with butter slices. All ham and sausages are handmade every morning to ensure freshness. Charcuterie is a task that requires a great deal of time and care, but the process itself is a source of pride. For coffee, specialty-grade green beans are carefully selected and roasted; the signature blend highlights nutty and dark chocolate flavors without acidity, while the single-origin blends maximize the unique characteristics of each bean. The principle is to provide a balanced taste that harmonizes well with bread, not only for customers who come solely for coffee. The Connect Hyundai Cheongju store is a bagel specialty shop that recreates the past Daejeon Doan-dong location, welcoming customers with special menu items not available at the main branch, such as fig bagels, green onion cheese bagels, and olive bagels.
